Christmas Day with the Duggan clan

While Oreo protects her gift, the rest of the family opened a few gifts before we have our annual open house. This has been a tradition for our family for many years and has become the highlight of our Christmas celebration. Our second Christmas in Costa Rica saw over 50 people come to our home with a mix of cultures, languages and foods. What a blessing it is to be able to carry on an important family tradition in a very different setting!
And of course, opening gifts is a fun part of the day. We have a natural divide within our famly….those who Facebook and those who don’t. The kids fit into the former, but I definitely do NOT use Facebook. However, Cathi has jumped on-board and a special gift for her from Keri was an official document that invited both Cathi and my mom to become Facebook friends. Ugh!Christmas Eve (and Eve-day)

It’s Christmas Eve…Pierna de Cerdo: A tradition for Costa Rican but a new Christmas Eve tradition for us!
24 DecMorning came a little earlier this AM as Cathi prepared her pierna de cerdo(leg of pig) for a Christmas Eve lunch!
Take one freshly slaughtered and herbed pierna, mix one bottle cerveza (beer) and one bottle Coca-Cola. Cook over low heat until tender while basting every 30 minutes to keep moist! Slice thinly and serve alongside all the traditional Duggan Christmas side dishes!
It was truly delicious and Oreo enjoyed one of the bones all afternoon! Guess I’ll have to come up with some new recipes for all the leftover meat!
